What’s for dinner?

Minimal Chopping Instant Pot Veggie Soup 

Ingredients:
1-2 tablespoons Olive oil
1-2 tablespoons tomato paste 
1 onion
1 squash
Diced garlic
Frozen cauliflower
Frozen carrots
Frozen potatoes
Chicken sausage or vegan sausage (diced) 
1 can rinsed chickpeas
8 cups veggie broth
Herbs to Provence
Salt & pepper 

Directions: Sauté onions and garlic in instant pot for a few minutes. Add chicken sausage, sauté for a few more minutes. Add tomato paste, stir for another minute. Add the rest of the ingredients. Set instant pot to “manual” for 7 minutes. Release pressure. Serve! 


Gingerbread Chai Latte

Ingredients

  • 2 cups milk (dairy or non-dairy)
  • 2 black tea bags
  • 1 tablespoon molasses
  • 1 tablespoon maple syrup
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • Whipped cream (optional)
  • Ground cinnamon for garnish (optional)

Instructions:

Start by pouring 2 cups of your preferred milk into a small saucepan. Heat over medium until it begins to steam, but avoid boiling. While the milk heats, get your other ingredients ready.

  1. Add the Tea Bags: Once the milk is steaming, add 2 black tea bags to the saucepan and let them steep for about 5 minutes, ensuring they’re fully submerged to release all the flavors.
  2. Mix in the Spices: After the tea has steeped, remove the tea bags. Add 1 teaspoon of ground ginger, 1/2 teaspoon of ground cinnamon, 1/4 teaspoon of ground cloves, and a pinch of nutmeg. Whisk thoroughly to combine all the spices.
  3. Sweeten the Mixture: Stir in 2 tablespoons of molasses and 1 tablespoon of maple syrup. Continue whisking until the sweeteners are fully dissolved and the mixture is smooth.
  4. Finish and Serve: Pour the gingerbread chai tea latte into your favorite mug. Top with whipped cream and a sprinkle of cinnamon or nutmeg if desired.
