Anti-inflammatory Tumeric Chicken or Turkey Soup
NGREDIENTS:
- Olive Oil
- Onion & Leek
- Carrots & Celery
- Garlic
- Turmeric
- Poultry Seasoning
- Chicken or Vegetable Broth
- Coconut Milk
- Chicken or Turkey Thighs or Breasts
- Peas
- Fresh Parsley
INSTRUCTIONS
- Sauté the Vegetables: In a large pot, heat olive oil over medium. Sauté onions, leeks, carrots, celery, and a pinch of salt until soft and caramelized.
- Add Aromatics: Stir in chopped garlic, turmeric, and poultry seasoning, cooking until fragrant.
- Simmer Chicken and Broth: Add chicken broth, coconut milk, and the chicken. Simmer gently until the chicken or turkey cooked through and the vegetables are tender.
- Shred Chicken: Remove the chicken, shred it with forks, and return it to the pot.
- Add Final Ingredients: Stir in frozen peas and fresh parsley, letting the peas cook through. Adjust seasoning with salt and pepper.
- Serve: Garnish with extra parsley and enjoy!
Anti-inflammatory Hot Cocoa
1 tbsp Cocoa powder
1/4 tsp ground ginger
1/4 tsp cinnamon
1/8 tsp Turmeric
1/2 tsp coconut oil (optional)
1 C Non-dairy milk ( I use oat milk)
2 tsp Honey or maple syrup (optional)
Directions:
1. Heat milk in a saucepan
2. While the milk is warming up pour all of the spices into the cup.
3. Pour the milk over the spices and mix well
