Tofu Cabbage Stir-fry
Ingredients:
- 2 tablespoons coconut aminos
- 1 tablespoon rice wine vinegar
- 2 tsp maple syrup
- 1/2 teaspoon vegetable bouillon paste
- 1–2 tbsp avocado oil
- Chopped scallions
- Garlic (as much as you like)
- 1/2 inch ginger, grated or minced
- 1 block of form tofu (pressed and drained)
- 1 tsp paprika
- 2 cups green cabbage, shredded
Instructions:
- In a small bowl combine your soy sauce, vinegar, sweetener, and vegetable bouillon. Whisk together to combine and set aside.
- Heat up a large skillet and warm up the oil. Add in the white parts of your scallion and sauté until the scallions start to soften. Add in the garlic and ginger, sauteing again until fragrant, about 1 minute.
- Crumble the tofu into the pan and then add in the paprika and coriander. If the pan is super dry, add a little more oil and sauté the tofu to completely coat in the spices. Continue to sauté and cook the tofu for about 3-5 minutes then add in the shredded cabbage.
- Stir fry the cabbage until it starts to soften, about 4 minutes, then pour in the sauce you prepared earlier over the tofu mixture. Sauté to combine and continue to cook until the tofu and veggies have evenly absorbed the sauce.
- Serve over rice. Enjoy!
Frozen Chocolate Peanut Butter Balls
Ingredients:
Filling:
- 1/2 cup greek yogurt (full fat)
- 1/4 cup powdered peanut butter (like pb fit, pb2, or similar brands)
- 1 tablespoon creamy peanut butter
- 1/2 tablespoon maple syrup
For the chocolate coating:
- 1/2 cup dark chocolate chips
- 1 teaspoon coconut oil
Instructions:
In a mixing bowl, combine Greek yogurt, powdered peanut butter, peanut butter, and maple syrup.
Line a plate or a baking tray with parchment paper. Using a medium cookie scoop or spoon, scoop the yogurt mixture onto the prepared surface
Place the bites in the freezer for 10-20 minutes or until they are solid to the touch.
While the bites are freezing, melt chocolate chips with a bit of coconut oil. Use a microwave or a double boiler to melt them, stirring regularly, until you have a smooth, liquid chocolate mixture.
Once the yogurt bites are solid, dip each one into the melted chocolate to coat thoroughly.
Place the coated bites in the fridge to allow the chocolate to set completely.
