Sadly, many adults relegate the wonder and celebration of birthdays to childhood, believing that it is juvenile to honor this yearly ritual in adulthood. Some want to celebrate their birthdays, but feel that someone else should lead the charge. This often results in feelings of disappointment when others fail to meet your expectations. What if there’s another way? This year, consider making your birthday extra special for yourself. Set the tone and rhythm that feels right to you. Make it hum with magic, whether it’s a milestone birthday or not. Take time to reflect on the past year and intentionally look ahead on the year to come. What’s for dinner?
Butter bean Salad
Ingredients:
2 cans butter beans
2 diced avocados
2 cups halved grape tomatoes
Diced fresh mozzarella
Diced bell pepper
Drizzle olive oil
Drizzle balsamic vinegar or glaze
Salt and pepper
Fresh basil
*Optional additions: chicken, cucumbers
Instructions: Add all ingredients into a big bowl, toss with olive oil, vinegar, and salt and pepper. Enjoy!
Berries & Fresh Maple Whipped Cream
Ingredients:
Wash and slice a big bowl of fresh
strawberries and blueberries
1 cup heavy whipping cream
3 tablespoons maple syrup
½ teaspoon vanilla extract
⅛ teaspoon salt
Instructions:
- Place the heavy whipping cream, maple syrup, vanilla extract and salt in a large mixing bowl and beat on low speed with an electric mixer until the cream is foamy, about 1 minutes.
- Increase to medium-high speed and continue beating until the cream forms stiff peaks.
- Top berries with whipped cream, enjoy!
