We live in a time when we’re more connected than ever, and yet simultaneously more disconnected than ever. We have the world at our fingertips, yet somehow many of us feel like we don’t belong anywhere. This experience of longing can lead to a deep sense of loneliness. A loneliness that can be felt by anyone, at any age, even when surrounded by people. To combat this longing, we must learn how to engage in meaningful solitude, an experience of being alone without feeling lonely. We must reclaim lost parts of ourselves, the parts we’ve abandoned in modern life; such as, meaningful rites of passage, our connection to nature, and our sense of belonging to the land. As we travel through the lush woods, ponder your deepest longing and the ways you might return to yourself.

What’s for dinner?

Sausage, Potato, & Asparagus Casserole

Ingredients:

  • 1 lb sausage of your choice, sliced
  • 4 medium potatoes, peeled and cut into bite-size pieces
  • 1 cup asparagus, ends removed and cut into 1-inch sections
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 2 tablespoons sun-dried tomatoes
  • 1 cup cheddar cheese, shredded
  • 1 cup chicken or vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and Pepper, to season
  • Top with fresh parsley, thyme, or dill 

Instructions:

  • Preheat oven to 375°F.
  • Dice potatoes, onions, garlic, sun dried-tomatoes, sausage, and asparagus. 
  • Layer potatoes and veggies in an oiled casserole dish, pour stock, and top with sausages.
  • Cover with foil, bake 40 minutes for Uncover, too with cheese, bake 10 more minutes for a golden crust.


Avocado Mint Chip Ice Cream

Ingredients:

  • 4 sm avocados or 2 lg avocados
  • 1/2 cup maple syrup
  • 1 can full fat coconut milk
  • 1/2 teaspoon mint extract
  • 1/2 cup chocolate chips 

Instructions:

  1. In a blender combine all ingredients (except chocolate chips) until smooth. Then stir in chocolate chips. 

  2. Pour ice-cream into a metal bowl and chill in freezer overnight or until it reaches ice-cream consistency.
