Who is the face in the mirror? Beyond the facial features and the various masks we wear, what is real underneath it all? We spend a great deal of time analyzing our reflections, but we rarely look deeply enough to uncover the authentic self within. If you took the time to gaze into your own eyes, without breaking contact, what would they tell you? When there was no one around to impress, what secrets would they reveal? What's for dinner?

Kale Quinoa Salad

Ingredients:

  • 1 chicken breast, grilled and sliced 
  • 1 cup quinoa, cooled
  • 1 cup fresh blueberries
  • 2 cup kale, shredded
  • ½ cup pumpkin seeds
  • ½ cup pistachios, salted
  • mint leaves to taste, chopped
  • ¾ cup goat cheese or feta cheese crumbles
  • 1 avocado, sliced
  • 1–2 lemons (juice of 1–2 lemons)
  • 4–6 tbsp extra virgin olive oil

Instructions:

  1. In a small bowl or jar, whisk together the lemon juice and olive oil. Season with salt and pepper to taste.
  2. Add shredded kale to a large bowl. Pour in 1-2 tablespoons of the olive oil and massage the kale with your hands for 1-2 minutes until it softens. 
  3. Add cooked quinoa, blueberries, pumpkin seeds, pistachios, chopped mint, avocado and feta cheese to the massaged kale.
  4. Top with grilled chicken slices. 
  5. Drizzle remaining dressing over the salad and toss gently to combine.
  6. Serve immediately or refrigerate for up to three days. Add avocado before serving if prepped ahead.


Crispy Peanut Butter Balls

Ingredients:

  • ½ cup natural peanut butter, almond butter or sunflower seed butter
  • ¾ cup crispy rice cereal
  • 1 teaspoon pure maple syrup
  • ½ cup dark chocolate chips, melted 

Instructions:

Line a baking sheet with parchment or wax paper. Combine peanut butter, cereal and maple syrup in a medium bowl. Roll the mixture into 12 balls, using about 2 teaspoons for each. Place on the prepared baking sheet. Freeze the balls until firm, about 15 minutes.

Roll the balls in melted chocolate. Return to the freezer until the chocolate is set, about 15 minutes.
